Whole Wheat What!?

Yesterday I experimented and made whole wheat sugar cookies. After tasting the raw dough, which had a consistancy like fine sand, I was slightly concerned about what the finished product would taste like. Tony doesn't like his foods to be too far off the beaten path, so I was getting nervous about a whole wheat sweet. The recipe made 3 dozen cookies, and between Tony, Blake and myself we are probably half way through the batch! The cookies are so tasty! I will definitely make again.  If you want to try these out yourself, go buy a bag of Kroger brand whole wheat flour. The recipe is on the back.

I can count the number of times Blake has enjoyed 'dessert' in his 14 months on one hand. He is definitely enjoying the cookies and can't take bites fast enough. He has had a cold since Sunday and hasn't felt like eating. So the fact that he is actually looking forward to the cookies is a good thing! (or at least thats my excuse for feeding them to him!)

Below are a few pictures capturing his reaction of his first cookie.

This doesn't look like a cracker!

Hmm, not so sure about this.

Mmmm, I love sugar!

Oh, Yummy!

Tonight I made a very quick meal for dinner and it turned out much tastier than I expected for how basic and easy it was. The recipe was for one person so I doubled everything, and tripled the prosciutto and beans. We highly recommend. YUM! (I forgot the lemon and it was still great)

Prosciutto-Wrapped Chicken Breasts with Roasted Green Beans
Martha Stewart Everyday Food 2008
Ingredients

Serves 1

4 ounces green beans, stem ends removed
2 teaspoons olive oil
Coarse salt and ground pepper
1 boneless, skinless chicken breast half
3 thin slices prosciutto
Lemon wedge, for serving

Directions

Heat broiler of toaster oven (or oven). On toaster-oven pan (or a small rimmed baking sheet), toss green beans with 1 teaspoon oil. Season with salt and pepper, and push to one side of pan.

Season chicken with salt and pepper; wrap with prosciutto. Place chicken, seam side down, on other side of pan; rub with remaining teaspoon oil.

Broil until chicken is opaque throughout, 15 to 20 minutes. Serve chicken and green beans with a lemon wedge.

Helpful Hint
Wrapping chicken with thin-sliced prosciutto keeps it juicy without adding much fat; a squeeze of lemon juice instead of a heavy sauce is another bright twist.
